Creamy Avocado soup.

Today's recipe is the avocado soup, this botanically large berry with a single seed cultivated in the tropical and Mediterranean climate provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid.
This creamy avocado soup recipe is taken from my collection of cookbooks!
Serves  4-6
2Tablespoons butter
1/4th cup all purpose flour
2cups vegetable or chicken broth
1small green bell pepper seeded and chopped
1large ripe avocado
2tablespoon lemon juice
salt and pepper to taste
1/4th cup light cream
1Tablespoon stripped chives
Melt the butter in a pan,sprinkle in the flour and cook for 2minutes,then stir in the broth. Bring to a boil and simmer for 10minutes.Blanch the green bell pepper for 10minutes in boiling water, drain and add to the pan. Mash the avocado flesh and stir in to the pan with lemon juice and seasoning. Heat gently for 5minutes then cool and chill for at least 1hour. Serve swirled with cream and sprinkled with chives!
